Stop Hazardous Heat and Toxic Pollution From Endangering Restaurant Workers

Target: Keith Sonderling, U.S. Secretary of Labor

Goal: Ensure appropriate regulatory actions and penalties for restaurants exceeding safe heat and pollution levels for their employees.

Restaurant employees are subjected to hazardous working conditions in commercial kitchens equipped with gas and propane appliances. Recent findings suggest that the heat and air pollution in such environments frequently exceed health-based guidelines, posing serious risks to the well-being of the estimated 15.7 million U.S. restaurant workers, many of whom spend their entire shifts in these kitchens. Exceedances of harmful pollutants, such as nitrogen dioxide and benzene, have been recorded in a substantial number of gas-fired kitchens, with one kitchen even registering nitrogen dioxide levels over 1,000 parts per billion. This level is alarmingly above the recommended short-term exposure limits, and it raises concerns about the long-term health effects on employees.

Additionally, the study highlights that a significant number of gas kitchens exceed the Occupational Safety and Health Administration’s (OSHA) high-heat threshold, with some surpassing temperatures of 122°F. Such extreme conditions not only jeopardize worker health but also reflect a lack of accountability and enforcement of safety regulations within the food service industry. It is vital that these workplace hazards are addressed swiftly to ensure the safety of restaurant employees.

Demanding accountability and appropriate repercussions for violations of health and safety standards is essential to protect workers. Stricter enforcement of existing regulations, coupled with increased penalties for non-compliance, is necessary to safeguard the health of restaurant workers across the nation.

PETITION LETTER:

Dear Secretary Sonderling,

Recent research from a peer-reviewed study has revealed concerning conditions faced by restaurant employees in commercial kitchens that use gas and propane appliances. These environments often see heat and air pollution levels exceeding health guidelines, impacting the safety and health of workers. For instance, reports indicate that approximately 70 percent of gas kitchens measured surpassed the EPA’s one-hour outdoor air standard for nitrogen dioxide, a pollutant associated with respiratory issues such as asthma. Additionally, it was found that some gas kitchens exceeded the OSHA’s high-heat threshold of 90°F, with alarming temperatures reaching above 122°F.

The implications of these findings are dire, as many well-being and safety standards are being ignored, potentially resulting in severe health risks for those who work in these establishments. Action is needed not only to protect our valued restaurant workers but also to uphold the standards that ensure safe working environments across the food service industry.

It is crucial that the Department of Labor takes immediate steps to address this issue by implementing stricter regulations, conducting thorough inspections of commercial kitchens, and ensuring that appropriate consequences for non-compliance are enforced. We urge you to prioritize the health and safety of restaurant workers nationwide by increasing oversight and protections against these hazardous conditions.

Sincerely,
