Eggs are a big staple in the average American diet. They’re cheap, full of protein, and relatively quick to make. Even if you choose not to eat eggs for breakfast, they are present in so many foods, including baked goods and mayonnaise, that it is hard to eliminate them from your diet. But the American egg industry is highly unethical. Huge numbers of chickens are crammed into tiny cages and forced to lay eggs to satisfy the high public demand.

That is why the work of Hampton Creek Foods is so crucial. A new start-up company, Hampton Creek Foods is hard at work researching alternatives to eggs for any and every situation a cook might encounter in the kitchen. They already have one product on the shelves, an egg-free mayonnaise, and are researching other possible plants to substitute in a wide variety of common egg-containing dishes.

Hampton Creek Foods’ research is highly needed. While there are several egg-free or egg substitute products on the market, many of them are laden with chemicals or fail to live up to the characteristics of eggs, especially in baked goods. We cannot keep relying on the egg industry, especially with its current problems, so it is imperative that a decent egg substitute is found. Not only is the egg industry unethical, but it is expensive, too. The cost of keeping chickens and harvesting eggs is on the rise and many consumers that want to eat ethically and safely cannot do so without going over their food budget. Your company’s goal of finding alternatives to eggs to use in different foods is a noble one and will provide many people a cheaper, safer, and healthier option.

Right now many companies that create vegetarian or vegan products rely heavily on chemicals or added sugar to make up for the altered ingredients in these meals. Your company’s commitment to the environment, consumers’ health, and consumers’ wallets is rare in the food industry these days. For that, we applaud your efforts and want you to know that we support Hampton Creek Foods’ mission and your products.

By focusing on healthy, cruelty-free, and inexpensive alternatives to foods like eggs, hopefully your company will inspire others to invest in research into food alternatives that are better for people, animals, and the environment.

  1. I’m sorry but this is a silly idea. Why not raise chicken humanely instead?
    Seems much more healthy to me than manufacturing some “egg alternatives”.
