A Chicago restaurant owner is redefining waste by ensuring that his business sends not a single bag to the landfill. Justin Vrany started his restaurant business in 2012, and from the very beginning made a pledge to keep it a “zero waste” operation. He has seen tremendous success, and has gained some popularity in recent months as news of his endeavor has spread.
From the very beginning Justin wanted to make his business as economical and waste-free as possible. He struggled alone for six months, working frantically to maintain his business and adhere to his strict standards. But all the hard work has paid off. Now the small, quick-service restaurant is turning a small profit as well as claiming the distinction of being completely waste-free: even the waste collected from people who brought in their own refuse was taken by an artist for use in sculpture projects.
Vrany uses methods such as sustainable energy, locally-sourced produce with minimal packaging, the reusing of food such as chicken bones for soup, and giving food scraps back to the farmers who produce the restaurant’s eggs.
It is an incredible achievement to start a business, and yet another to commit to producing zero waste. Justin Vrany has accomplished this, and his efforts should inspire other restaurants–many of which produce the same amount of waste per hour that Justin has in the last two years–to change their working procedures in order to cut down on, and even eliminate, waste.

I am writing with sincere gratitude for the work you have done with Sandwich Me In over the past couple of years. After reading your story I feel inspired and hopeful that more businesses will follow in your footsteps and seek to become waste-free. To make a commitment on the scale that you have is a wonderful thing, and it is great to see the positive press you are receiving because of it.
You are an inspiration to people who want to save the environment, and I truly hope that the story of your success leads to a wave of action spurring restaurants and other types of businesses to utilize similar methods and and thus combat climate change. If all people acted in the way that you have our world would be a much better place.
